• 4 ovos
• 1 xícara de xilitol (ou outro adoçante natural de sua preferência)
• 1 xícara de leite (pode ser vegetal: amêndoas, aveia ou coco)
• ½ copo de óleo de coco
• 2 xícaras de farinha de arroz
• 1 colher de sopa de fermento em pó
• Essência de baunilha a gosto (1 colher de chá é suficiente)
• 1 xícara de cenoura ralada (ralo fino)
• 1 xícara de nozes picadas
• 1 colher de chá de canela em pó

Modo de Preparo

1. Comece batendo os ovos com o leite até formar um creme homogêneo.
2. Adicione o xilitol e bata mais um pouco.
3. Peneire a farinha de arroz e junte ao creme, junto com a essência de baunilha.
4. Acrescente o óleo de coco, a cenoura ralada, as nozes picadas e a canela. Misture bem com uma espátula.
5. Por último, adicione o fermento em pó, mexendo suavemente.
6. Unte uma forma com manteiga (ou óleo de coco) e farinha de arroz. Despeje a massa.
7. Leve ao forno pré-aquecido a 170ºC por aproximadamente 40 a 50 minutos ou até que o topo esteja dourado e o palito saia limpinho.
