Ah, minha filha… o Bolinho de Canela Lowcarb sempre foi aquele quitute que eu preparava nos dias mais fresquinhos, quando o cheiro da canela no forno fazia a casa inteira sorrir em silêncio.

Esta versão moderna, feita com farinha de amêndoas e xilitol, mantém todo o sabor e carinho de antigamente, mas é mais leve e ideal para quem evita glúten e açúcar. Agora, vem cá que a vó vai te ensinar direitinho, como se estivéssemos na cozinha juntas, com avental e tudo!

Ingredientes do Bolinho de Canela

Para a massa (rendimento: 4 unidades):

• 35 g de farinha de amêndoas
• 40 g de xilitol
• 1,3 g de fermento químico em pó (cerca de 1/4 de colher de chá)
• 1 pitadinha de sal
• 1 ovo (em temperatura ambiente)
• 30 g de cream cheese (em temperatura ambiente)
• 2 colheres de sopa de manteiga em temperatura ambiente (dividida em 2 partes)
• 1/4 de colher de chá de extrato de baunilha

Para a cobertura de canela:

• 1 colher de sopa (aproximadamente 30 g) de manteiga derretida
• 1/2 colher de sopa de xilitol
• 1/4 de colher de chá de canela em pó

Modo de preparo detalhado

Comece batendo 1 colher de sopa da manteiga com o xilitol até virar um creme fofo. Pode usar um fouet ou uma batedeira pequena. Quando estiver bem incorporado, adicione o cream cheese e a baunilha, batendo novamente até formar um creme sedoso. Em seguida, junte o ovo inteiro e misture bem, até tudo ficar homogêneo e brilhante.

À parte, misture a farinha de amêndoas, o fermento e a pitada de sal. Vá adicionando essa mistura seca ao creme, aos poucos, mexendo suavemente até formar uma massa cremosa, mas leve.

Divida essa massa igualmente entre 4 forminhas de silicone para cupcake. Leve ao forno preaquecido a 180?°C por cerca de 10 a 15 minutos, ou até que fiquem firmes e levemente dourados por cima. O cheirinho de canela vai avisar quando estiver quase pronto.

Espere esfriar por cerca de 5 minutos antes de desenformar — isso ajuda a manter a estrutura do bolinho sem desmanchar.
